Blueberry-Banana Stacks

So today I was supposed to have a little guest blogger.  However, she decided it was best to go outside and play.  I found this snack that I wanted Brooklyn to try and make since there was no stove or hot things involved.  And I wanted her to type in how she made it while I took the pictures.  But again, play time was more important!  So Nana made them!!

Nothing too hard about making these at all.  They were pretty good if I do say so myself.  And the kids sure didn’t have a problem coming in and making the ones I made either!!

I used fat free cream cheese, the rice chips are full of fiber, the fruit…..A great snack for the kids (and the big kids as well.

Ingredients
  • mini chocolate, caramel, or berry-flavored popcorn cakes (use as many as you want)
  • 1 – 2 tablespoons strawberry-flavored cream cheese
  • banana slices
  • fresh blueberries
Make ItSpread cakes with cream cheese and top with banana slices. If desired, dollop with additional cream cheese and top with a blueberry. Serves 2.I made about 12 of the stacks so that there was enough to pass around for all of us.  They are all gone!!!!  I’m not sure if you can call these healthy or not but it’s better than snacking on candy!!Have a great weekend.

Orange Dream Tarts

I love fruits of all kinds when learning to bake.  I love the fresh smell of lemons and limes and especially oranges when using the peel.  Just gives you a fresh scent when baking.  I almost wished I would have added more to this recipe so the flavor would burst through a bit more.  But either way, these tarts are a fresh dessert for any occasion.  Such as baking at 9:30 pm to have a little snack??  Yep, that’s a good idea..

I cheated a bit on this one.  Not afraid to mention that.  I had some pastry puffs in the freezer and thought, well I sure can’t let those go to waste.  I’ll include the recipe for the pastry, but if you’re feeling like me and wanting to add just a bit of home made to it, go right on ahead.   I don’t think there’s anything wrong with that at all!  Why would I?  I just did it!

These would be fun little desserts for a baby shower or a bridal shower.  Or….as I said, just because you need to bake something to have on hand for a little snack!!

Pastry

1/2 cup butter or margarine, softened
1/3 cup sugar
3 tablespoons milk
1/4 teaspoon vanilla
1/4 teaspoon salt
1 1/3 cups Gold Medal® all-purpose flour
Filling
1 package (8 ounces) cream cheese, softened
1/4 cup sugar
3 tablespoons Gold Medal® all-purpose flour (or whatever you have on hand)
1 egg yolk  
1/2 teaspoon grated orange peel
2 teaspoons orange juice
1/4 cup flaked coconut
Citrus peel cutouts, if desired (I didn’t have anything to cut out the peel so I didn’t get to do this)   😦
  • 1 Heat oven to 375ºF. In medium bowl, mix 1/2 cup butter, 1/3 cup sugar, the milk, vanilla and salt with spoon. Stir in 1 1/3 cups flour.
  • 2 Divide dough into 24 equal pieces. Press each piece in bottom and up side of small muffin cup, 1 3/4×1 inch, ungreased or lined with paper baking cups.
  • 3 In medium bowl, mix cream cheese, 1/4 cup sugar, 3 tablespoons flour, the egg yolk, orange peel and orange juice. Spoon slightly less than 1 tablespoon mixture into each cup. Sprinkle with coconut.
  • 4 Bake 15 to 20 minutes or until pastry is light brown around edges and filling is set. Cool slightly; loosen from cups with tip of knife. Remove from pan to wire rack. Cool completely, about 1 hour. Top with citrus peel just before serving. Store covered in refrigerator.

Dulce de Leche Cheerio Bars

I’ve been going back and forth with my recipe finds from Betty Crocker to Pillsbury and also Big Fork Little Fork.  This one caught my eye on Betty Crocker’s site.
I have never been one to eat sweets very often.  But it is much easier for me to find treats that the family will eat over dinners that I have to rack my brain to find something everyone enjoys.
When the kids see a treat, they’ll at least try it.  When they see broccoli on their plate, I don’t get the same response.  When they saw the Marshmallow Truffles in the fridge before breakfast, they asked for one.  How often am I going to get that for dinner?  Not that often.  And don’t get me wrong, I do make them eat those things they don’t like.   It is much easier for me to find something fun for them and myself to bake and blog and also eat at the same time.
Oh, I’ll still be blogging meals, because I do have new ones every week.  Oh lets just move on shall we?
Here’s what you need:
1 1/2 cups graham cracker crumbs
1/2 cup finely chopped pecans
1/2 cup butter, melted
1 1/2 cups Dulce de Leche Cheerios® cereal
1 cup coarsely crushed pretzels
1 cup white vanilla baking chips (6 oz)
1 cup milk chocolate chips (6 oz) (I used 2 cups of white vanilla baking chips)
1 cup coconut
1 can (14 oz) sweetened condensed milk (not evaporated)
  1. Heat oven to 350°F. In medium bowl, mix cracker crumbs, pecans and melted butter. Press in bottom of ungreased 13×9-inch pan.
  2. Sprinkle cereal and pretzels over crust. Layer vanilla chips, chocolate chips and coconut over pretzels. Pour condensed milk evenly over top.
  3. Bake 25 minutes or until lightly browned. Cool completely, about 45 minutes. For bars, cut into 5 rows by 4 rows. Store covered at room temperature.

I can’t believe I have to wait 45 minutes for these to cool off first.  I lack patience at certain things.  Ok at most things, but waiting to taste something drives me bonkers.  I try to hold out and end up trying it before I should have!

  I wonder what the kids will chose for a snack today after school?  An apple, a marshmallow truffle, or these nummy bars!

Here’s some Betty Crocker helpful tips:

To crush the pretzels, place in a food-storage plastic bag and crunch them with your hands.

To make cutting easier, you can line the pan with parchment or waxed paper extending over the sides of the pan. Then after baking, lift the bars from the pan and cut them on a cutting board.

20 Low Sugar Snacks

I subscribed to Every Day Health and get daily emails.  Some are about exercises, oral hygiene habits, healthy eating habits, etc.  When this email came to me I thought I’d share it in case there are others out there that are trying to watch your sugar intake.  Whether you’re diabetic, have cholesterol issues or what not, these sounded pretty good.   I know that I’ll give quite a few of them a try.

I realized that when I was put on a low fat/low cholesterol diet I removed those foods that were high in fat (or tried to do the best I could).  But what I also learned from watching a recent 60 minutes program “Is Sugar Toxic”? I had to make some changes.  When I took the fat out of the food, I was replacing more sugar in my body.  The show states that when food takes the fat out, it’s replaced with sugar to make it taste better.  So for those that are diabetic and also trying to watch your fat intake, this could be helpful.  I’m sure not a doctor by any means, I’m just speaking on what I’ve seen happen to my own body by removing those fatty foods.  My blood glucose numbers got higher!

That means the dang Easter candy is out!  Though I believe that all things are in moderation, I also believe that what I saw on the show to be eye opening.  No I’m not getting anything by promoting 60 Minutes or Every Day Living, I’m just trying to pass on a good word when I see it.  If you don’t have time to watch the video, let me share one important thing that surprised me the most.  These doctors did a study with healthy adults.  They put them in a room, where they were observed 24/7 on their eating habits.  The first month they were given food that was good for them, it was weighed out for size control.  They would monitor their blood levels for any changes.

The next month they gave foods full of sugar, kool aid, fatty foods, etc.  They monitored they blood levels every 30 minutes.  There was a noticeable change in their blood sugar levels within 2 weeks.  Just an eye opening thought.  Again, when I came across this site with the low sugar snacks, I had to post.

Whole Nuts

I recommend one ounce (about a quarter-cup, and don’t go overboard since they’re high in calories) of unsalted almonds, cashews, pecans, walnuts, peanuts, macadamia nuts, or soy nuts.

Cottage Cheese with Nuts or Flaxseed

Peanut Butter with Celery Sticks

Pistachios
I single out pistachios for a couple of reasons: Of all types of nuts, they contain the highest level of phytosterols — natural plant compounds that have been shown to lower cholesterol. They’re also my “nut of choice” when it comes to weight loss: For 100 calories you get about 25 pistachio nuts (per nut, they’re the least caloric of all nuts) and, because you have to remove the shells, they’ll slow down your eating!

Edamame

Guacamole (a heart-healthy pick, thanks to themonounsaturated fats in avocado) and hummus (made from nutrient-rich, high-fiber chickpeas) both make great snacking dips. Try a quarter cup of either with sliced vegetables for your next mid-afternoon pick-me-up.
120 to 150 calories, 13 g carbohydrates

Sunflower Seeds
Sunflower seeds may be tiny, but they’re big on nutrition. Like nuts, they’re high in healthy fats and protein and low in carbs — the ideal nutrient ratio for a diabetes-friendly snack. As an added bonus, the seeds are rich in magnesium, a mineral that may aid in blood sugar control. A half cup of shell-on sunflower seeds is a good snack-sized portion (and removing the shells will slow down your munching). Ideally, choose unsalted seeds to keep sodium levels down.

Celery Sticks and Cream Cheese

Veggies with Cottage Cheese

Note that I recommend artificially sweetened yogurt for diabetics rather than regular sweetened yogurt to keep carb intake to a minimum.

I’ve been doing a lot of baking lately and was asked yesterday by Craig, when we talked about sugars, how I felt about the kids eating these things as well.  And I do agree.  All things in moderation.  Will I take sugar completely from our house?  Most likely the answer is no.  But I will be more aware of what I’m using and making and giving the family.  If it’s not in the house, it can’t be eaten.  If it can’t be eaten as often, then maybe it can be forgotten.
