Strawberry Swirl Cream Cheese Pound Cake


Let me start by saying…. I made this.  From scratch.  Ok it’s not my recipe.  Usually if I’m baking something it can’t be my own recipe.  No one would be able to eat it!!  But Brown Eyed Baker had this posted a while ago and I thought I’d give this a try.  (I’m now reaching my hand back and patting myself for a good job!!)

Well I just followed directions, but when I can make it and it tastes good, I am a happy person.  This was gone within 2 days!!!

It’s been a while since I’ve posted because I’ve been busy with my stella & dot business and these kids here.  But this is my first passion so I do have to stay on top of it.


How pretty!!  The kids love strawberries.  So much so they tried to eat them before I was done with my photos!!!


I do have to admit, strawberries are one of my favorite too!  Nothing beats a nice crisp apple, but strawberries with a bit of sugar..mmmmmm!!!!

I know I’ve said many times, if you get a chance to make this, you really should.  But you really should.  My pictures don’t do justice as to how good this really is!!

We’ve had a pretty crazy season here in MN.  It snowed until May.  Then it decides to rain every day.  Now it’s in the 90s.  I am so not going to complain but it makes it hard to decide if you should bake or not.  It feels like fall most days and now we’re in the dead of summer.  And you will NOT catch me complaining one bit.  Not one bit!

Strawberry Swirl Cream Cheese Pound Cake
Recipe Type: Dessert

  • For the Strawberry Swirl:
  • ⅔ cup finely diced fresh strawberries
  • ¼ cup granulated sugar
  • ¼ cup water
  • 1 tablespoon cornstarch
  • For the Pound Cake:
  • 1½ cups unsalted butter, at room temperature
  • 8 ounces cream cheese, at room temperature
  • 3 cups granulated sugar
  • 6 eggs, at room temperature
  • 3 cups cake flour, sifted
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt
  2. Make the Strawberry Swirl: Combine the strawberries, sugar, water and cornstarch in a small saucepan and cook over low heat, stirring constantly, until the mixture becomes very thick. Set aside and allow to cool to room temperature before using.
  3. Make the Pound Cake: Preheat oven to 325 degrees F. Grease and flour a standard-size Bundt pan.
  4. Using an electric mixer, beat the cream cheese and butter on medium speed until combined and soft, about 2 minutes. Add the sugar continue to beat on medium speed, scraping the bowl once or twice, until the mixture is very light and fluffy, about 5 minutes. Add the eggs one at a time, beating until each one is completely incorporated before adding the next. Scrape down the sides of the bowl, reduce the speed to low, and gradually add the flour until it has all been combined. Add the vanilla extract and salt and mix on low speed until incorporated, about 1 minute.
  5. Spoon about ⅔ of the cake batter into the prepared Bundt pan. Top evenly with the strawberry filling, leaving a 1-inch border around the edge of the pan. Use a thin paring knife to gently swirl the strawberry filling with the cake batter just a few times – less is more. Spoon the remainder of the cake batter on top of the filling and gently spread to the edges of the pan, covering the filling.
  6. Bake for 1¼ to 1½ hours, or until a thin knife inserted into the center of the cake comes out clean. Allow the cake to cool in the pan for 15 minutes, then turn it out onto a wire cooling rack and allow to cool completely before serving. Leftovers can be wrapped in plastic wrap or placed in an airtight container and stored at room temperature for up to 4 days, or in the refrigerator for up to 1 week.

Cream Cheese Pizza Crust


When I saw this recipe on Facebook, I almost thought gross, I’m not going to try this.  I’m just saying.  Who would ever think to make a pizza crust with cream cheese?  Well, let me tell you that this is amazing.

I’m a huge pizza lover (no it doesn’t compare to Zantigo, but home made pizza is on the top of my list.

This crust has one of the best flavors.  It’s got the carbs gone!  Ok fine, the cheese (which was fat free I might add) may not be the best, and yes there’s the cream cheese factor, but all things in moderation.  Plus this was too fun not to make.  I popped two of these pans in the oven because I knew I was going to eat at least one of the pans!!!!  Mine had onions, black olives, pepperoni, sausage.  The other pizza, which the kids and Craig ate, had just pepperoni and sausage on it.  They just don’t know what they are missing.  In fact neither will you unless you put this on your recipe list to make for dinner.  Super easy, super tasty and the kids love helping too!

And you know how you’re supposed to wait 2o minutes after you’re feeling satisfied, not full, but satisfied to see if you are still hungry?  That wasn’t even a thought process in my brain!  I ate until I couldn’t eat anymore.  I know, great example!  And what wasn’t gone that night form my pan, I ate cold for lunch the next day!!

Cream Cheese Pizza Crust
Cuisine: Pizza

  • Pre-heat oven to 350 degrees.
  • Crust
  • 1 (8 oz) package of full fat cream cheese, room temperature
  • 2 eggs
  • 1/4 tsp ground black pepper
  • 1 tsp garlic powder
  • 1/4 cup grated parmesan cheese
  • Topping
  • 1/2 cup pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • toppings – pepperoni, ham, sausage, onions, green olives – whatever you love on your pizza.
  • Garlic powder
  1. Lightly spay a 9×13 baking dish with cooking spray. With a handheld mixer, mix cream cheese, eggs, pepper, garlic powder and parmesan cheese until combined. Spread into baking dish. Bake for 12-15 minutes, our until golden brown. Allow crust to cool for 10 minutes.
  2. Spread pizza sauce on crust. Top with cheese and toppings. Sprinkle pizza with garlic powder. Bake 8-10 minutes, until cheese is melted.

Simply delicious!  Can’t say anything else.  Just awesome.  Go ahead and try it.  Reach out of your normal pizza box and try it!

My Sister Site – Stella & Dot


So as most of you know, I had been doing some posting on becoming a Stella & Dot stylist.  I decided that it just didn’t come across, well ok to have jewelry posting on a food blog.  When sending out the post it comes from Two Girls Cooking.  So I have what I’ll call my “Sister Site” now for blogging on my adventure of all things Stella & Dot.

I have so many different posts that I need to get caught up on for this blog as well.

 I made a pizza that I found on Facebook.  The crust was made with cream cheese.  That was fabulous!  I’m hoping to get to that real soon.

Calling All New Stylists


I’ve shown this little picture to you all about stella & dot hiring.  I get inspired when I listen to how others are doing so well.  It puts so much more passion into what I’m doing and thriving for.  THE most common thing I’m told when I approach someone about hosting a Trunk Show or even becoming a stella & dot stylist is “I’m too busy!”.   I understand that as much as the next person.  But what I also know is that (and it was confirmed today by others) is that when you love what you do, you’ll find the time to do it!

The call that I heard was geared more towards teachers and how they have succeeded at becoming stylists with stella & dot and have either quit working full time or are making more money with less work time (fun work time might I add) than with what they are doing now.

I love teachers.  Teachers should get paid a high salary.  They spend the most time with our children, they have to deal with our children’s attitudes, but most importantly they are teaching our children.  They are teaching our children.  And when I hear stories of success from teachers that they love what they do AND they love being a stella & dot stylist, it is so inspiring.

One of the stylists from the call had said that she was in financial hardship.  They had to sell things to keep money coming in.  She had seen an ad online for celebrity style stella & dot jewelry.  She looked it up, did some research and found out how much it cost to become a stylist. She had a rocking chair that she had saved and decided to sell it for $199.  The cost of the starter kit!  She talked to her husband about it and he agreed.  She signed on last November (if I remember correctly) and has already made $80,000 in retail sales.  She is a Star Stylist.  What is a Star Stylist? It means I have a team of stylists underneath her, of which 4 or more of them sell over $780 a month in jewelry, and I then sell over $2300 in jewelry to earn 12% of their sales.

Right now I have one stylist under me and that made me a Lead Stylist.  I found an article called Is stella & dot Right For Me.  I took some of her wording above for the star stylist.  But read her article as well.  It gives a perspective from someone other than me.  There are so many people that are hurting for income.  Yes, you have to come up with $199 to get your business going, but you have all the online training you’ll need.  You’ll have team meetings once a month, you’ll have great support from your sponsor.  AND you have fun doing so.  You’ll have fun doing so.

One thing I did learn is that people over think when it comes to doing something like this.  I know I didn’t need much time or convincing to become a stylist.  I love the brand.  I loved how the flow of the shows work.  I love how you can make of it what you want.  I love how you meet new people and grow new friendships.  I love how stella & dot reward you for doing so well.

And this month there is another great reason to sign on.  You will get an extra $100 in product!

June has some pretty great specials for hostesses AND their guests.  It’s called Dot Dollars.

I had my first Trunk Show in March of this year.  I haven’t had any parties for a long time.  But one of my friends had one and I really liked the product, the flow of how the show went.  There were no games to play, there wasn’t a forced feeling of hosting a show by drawing a ticket or anything.  The product was displayed on a table and you got to try it all one.  Once you walk in the door a beautiful piece of jewelry was put on!!  I loved it.   The stylist was very laid back.  She was there to answer questions and help us all feel comfortable with what we wanted to wear or what we were looking for.  So I decided to have a show.  At the end of my show I was talking to Ann (my sponsor) asking questions about stella & dot.  I told her how I loved their product, especially their girls line and now the bags.  Most Trunk Show sales make an average of between $500-$1000 in sales.  That gives the hostess around $250 in FREE product PLUS 4 items at half off.  I had to do this.

So Ann gave me all of the information I needed to become a stylist.  I joined a call with the CEO one night and decided I had to take advantage of this great product that I love and become an Independent Stylist myself.  There was a special for signing up during the month of March as there is now.


To become a stylist doesn’t cost much out of pocket expense.  In fact, you’ll make that back and more during your first month of Trunk Shows.
