Peppermint Mocha Cookies

One of my favorite ways to warm up on a cold day is with a Peppermint Mocha. So since we had our first snowfall I thought it would be the perfect time to try making one of my favorite lucywhip/blog tv recipes with a twist. I think they turned out well, though maybe a little too minty for some.

Peppermint Mocha Cookies

1 cup Semi-Sweet Chocolate chips
1 cup Mint Chocolate chips
4 tbsp unsalted butter
2 large eggs
3/4 cup granulated sugar
1 tbsp instant coffee 
1/4 tsp peppermint extract
1/2 cup all purpose flour
1/4 tsp baking powder
1/4 tsp salt

Melt semi-sweet chocolate chips and butter together in microwave. Dissolve instant coffee in about 1 tsp warm water. Cream eggs and sugar together, then add the coffee mixture, the melted chocolate chips/butter and the peppermint extract. Mix flour, baking powder and salt and add to wet ingredients. Stir in the mint chocolate chips. Refrigerate for 15-30 minutes until firm. Scoop and bake at 375 on a lightly greased baking sheet for 7-10 minutes (cooler or frozen dough will take a little longer). Let cookies stand on baking sheet for a couple of minutes.
